What are Oxymels? The Power of Vinegar and Honey Tonics
Vinegar tinctures often have a sour and intense taste, but when combined with honey, they transform into a delightful remedy known as an oxymel. This ancient concoction harnesses the medicinal properties of both vinegar and honey. By macerating herbs in vinegar before adding honey, you create a powerful, delicious tonic that benefits both your taste buds and your body.
The Ancient Medicine of Honey
Honey has been cherished throughout history for its medicinal properties and distinct sweetness. Produced by honeybees from flower nectar, each type of honey offers unique benefits. Local honey is particularly advantageous, as it can help treat plant allergies by introducing small amounts of bee pollen, boosting immunity naturally.
Honey also soothes sore throats and calms upset stomachs due to its anti-inflammatory and antimicrobial properties. Additionally, the sugars in honey make it an excellent prebiotic, promoting gut health.
Apple Cider Vinegar as a Superior Menstruum
Vinegar is an excellent solvent for herbal macerations, especially when alcohol is too harsh. Vinegar-based tinctures are suitable for adults and children (avoiding fermented foods for kids under one year old). Apple cider vinegar (ACV) is my go-to choice due to its gentle effect on the stomach and soothing properties. ACV’s slight sweetness from apples makes it more palatable, particularly for children.
Herbs to Strengthen your Immunity
This tonic features herbs renowned for supporting the immune system, helping prevent illness before symptoms arise. Elderberry, echinacea, and holy basil (tulsi) are the stars of this blend, offering a potent immune-boosting combination with a vinegar and honey base.
Elderberries for Immunity
Elderberries (Sambucus nigra) are small, dark purple berries known for their high antioxidant content. These antioxidants, particularly anthocyanins, help protect cells from damage and support the immune system. Elderberries have been used for centuries to combat colds and flu. They are believed to enhance the body's immune response, reducing the severity and duration of symptoms. Additionally, elderberries have anti-inflammatory properties, which can help reduce inflammation in the body and promote overall health.
Echinacea to Combat Infections
Echinacea (Echinacea purpurea) is a flowering plant commonly used to fight infections and support the immune system. The leaves, flowers, and roots contain bioactive compounds like alkamides, polysaccharides, and flavonoids, which have immune-boosting and anti-inflammatory effects. Echinacea is known to stimulate the production of white blood cells, which are crucial in fighting infections. It is particularly effective in reducing the symptoms and duration of the common cold and flu, making it a valuable addition to any herbal medicine cabinet.
Holy Basil (Tulsi) for Balance
Holy Basil (Ocimum sanctum), also known as Tulsi, is an adaptogenic herb revered in Ayurvedic medicine for its ability to balance the body's systems and enhance overall well-being. Tulsi is known to reduce stress and anxiety, boost immune function, and support respiratory health. It contains phytochemicals such as eugenol, rosmarinic acid, and apigenin, which have anti-inflammatory, antioxidant, and antimicrobial properties. By supporting the immune system and helping the body adapt to stress, Tulsi plays a crucial role in maintaining health and preventing illness.
Oxymel for Immune Health
This tonic is perfect for large batches. During winter, I use it every morning to stave off illness. Its most prominent attribute is its dark purple color due to the elderberries. This tasty fruit is typically dried but will absorb a lot of vinegar during maceration. You'll want to use a jar with a lot of extra space and really take the time to squeeze out your berries after macerating. Here’s how to make it:
Ingredients
473 grams (2 cups) Apple Cider Vinegar
118 grams (½ cup) Honey
50 grams Elderberries
20 grams Echinacea
12 grams Holy Basil
Procedure
Prepare the Jar: Add each herb to a larger jar than needed, as elderberries will swell.
Add Vinegar: Pour the measured vinegar into the jar.
Seal and Shake: Set the intent to boost and heal your immune system as you shake the jar.
Daily Shake: Shake the jar daily for 4-6 weeks, watching the vinegar turn dark purple.
Strain the Mixture: After maceration, strain the mixture through cheesecloth, squeezing out every drop.
Add Honey: Pour the tincture into a heat-safe container and add honey. Heat gently, stirring until honey dissolves (keep under 100°F to preserve the medicinal benefits of the honey).
Bottle It: Pour the tonic into a bottle. Take a spoonful or two when feeling unwell, or daily for a health boost.
